Cheese Crackers

Yield: Lots! 100-150 small crackers

INGREDIENTS:
2 Cups all-purpose flour
Salt, a pinch
1 teaspoon cayenne pepper
1 pound sharp cheddar cheese, grated and at room temperature
1 cup unsalted butter, melted
2 cups Rice Krispies cereal

DIRECTIONS:

  1. Preheat oven to 300 degrees
  2. Combine flour, salt and cayenne in a large bowl; add cheddar cheese.  Toss until cheese is coated.  Pour melted butter over flour/cheese mixture while stirring until all is moist and crumbly.  Add rice cereal  and knead or work in by hand until dough is well blended.  Patience!  This takes a little while. Mixture will be on the dry side.
  3. Roll dough by hand into ½-¾ inch balls; arrange on a baking sheet.  Flatten with a flat-bottomed glass that has been sprayed with Pam.
  4. Bake in the preheated oven until light and crispy, about 30-35 minutes.
